Today’s recipe is a spin off of my Homemade Goldfish Recipe. But it takes much less time! While the goldfish recipe is really easy to make, cutting out all those little shapes takes quite some time. So today I’ve decided to try something a little different! I found the recipe here and decided to give it a go.
Just an FYI, this recipe is really delicious! The cheesy cheddar balls are very fluffy and slightly cracker-like. If you really love the cheddar cheese CRACKER taste of goldfish, then stick with that recipe (found here)… but if you don’t mind your cheesy snack not having a lot of crunch, then this is a great recipe for you!
What you need:
- 1 cup Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 3 cups Cheddar Cheese (grated) -get creative! Try out different flavors of cheese 😉
- 6 tablespoons Butter (cold and cut into small pieces)
- 1 tablespoon Milk
Step 1: Pulse the flour, baking powder, salt, cheese, and butter in a food processor until it resembles crumbly sand.
Step 2: Add in the milk and pulse until the dough forms into a ball.
Step 3: Preheat the oven to 325 degrees F (original recipe calls for 350 degrees, but I found that the bottoms were browning much quicker than the balls were cooking, so I altered this step to prevent burning).
Step 4: Spray your pan with non-stick spray and pinch off little bits of dough (about a teaspoon worth). Roll the dough into a ball between your hands and place on the baking sheet. (Allow a little room for spreading.)
Step 5: Stick the cheesy cheddar balls into the oven for about 20-25 minutes. (If using 350 degrees F, the original recipe says 15 minutes but people commented about them cooking way faster than that) This cheesy snack is done when firm to the touch and don’t give-way when you put slight pressure on them. (You can also cut into one to see if it’s cooked through)
I was able to get 55 balls out of this recipe!
