Today, Spencer and I got the wonderful news that he got his dream job at Honda (in Ohio)! Which of course called for some celebration! I was so excited (and proud) for Spencer that I couldn’t sit still, so I went to the kitchen to whip up something yummy (and guilt free).
Guilt Free Chocolate Chip Cookie Recipe
You seriously don’t need many ingredients for this recipe… no butter, no flour. And still oh so delicious.
What you will need:
- 1 cup Rolled Oats
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1/2 cup Peanut Butter
- 2/3 cup Brown Sugar
- 2 large Eggs
- 2 teaspoons Vanilla
- 2/3 cup Chocolate Chips
- 1/3 cup Slivered Almonds
Step 1: Preheat your oven to 300 degrees F. In a medium sized bowl combine; oats, baking soda, salt, and cinnamon. Mix well.
Step 2: In a large bowl, using a stand mixer or hand mixer, combine the brown sugar, peanut butter, eggs, and vanilla until creamy.
Step 3: Pour the bowl of dry ingredients into the wet ingredients and mix until well incorporated. It’s going to be sticky and ‘goopey’ but delicious!
Step 4: Stir in your chocolate chips and your almonds! They are almost ready 🙂 Are you drooling yet?
Step 5: Spoon out good hearty sized cookies onto a greased pan and pop them in the oven for 8-10 minutes!
The cookies are ready when they are golden brown and not gooey (in the sense of being not cooked) in the middle. Let them cool off a little on the pan before transferring them onto a cooling rack to finish cooling off!
Now grab yourself a cookie and enjoy!
Or two cookies… they are good!
Or three cookies… there is nothing wrong with enjoying three cookies. Especially when these are so guilt free! Just don’t forget to give your husband a cookie (since he is the reason why you made them).
